I can’t imagine how delightful I was when I came across this biscuit shop. Reason being was, I am able to find back the long-forgotten Jiangsu Biscuits, finally! I’ve been searching high and low for this pastry since the last 5 years, at least. Historically, these whitish biscuits are eaten by vegetarians and my first encounter with it was when am with my late grandma, during my toddler time. Am missing those authentic biscuit as well as beloved grandma too. This biscuit I would say an acquired taste to certain people. For those who don’t really enjoy it, they think it’s kind of tasteless and solid as it is just made of mainly flour, sugar and water. The the dough is dashed with some flour, so to prevent it from sticking with each other. Well, they might be right about the ingredients, but to me, I really savor and appreciate the taste very much. It ain’t tasteless, it is just that mild sweetness as oppose to our normal oriental cuisine which is of strong flavors. Besides, there is also some light hint of eggy flavor, which reminds me of egg chiffon cake. It’s nice thought, just might be bit dry. So, it’s better to take with a cup of tea to wash down the throat perhaps? ^^ According to the shop owner, nowadays, indeed is really hard to find this traditional pastry as the baking process does need some certain skill. Therefore, am very glad to have found it again and relived the nostalgic moment once more! ^_^
